COD FRITTERS

FOR 4 PERSONS

INGREDIENTS

  • 300g Desalted Cod
  • 3 Peeled Boiled Potatoes
  • 2 Sliced Garlic Cloves
Batter
  • 250gr Flour
  • 1 Egg
  • 2gr Compressed Yeast
  • 250gr Beer

PREPARATION

Add some drops of olive oil in the frying pan and poach the cod together with the garlic cloves during 10 minutes. Mix the cod with the potatoes and mash them together while adding some olive oil to texturize it. Leave the pure to stand in the fridge for 12 hours.
Mix all batter ingredients and let it rest 30 minutes.
Make small balls with the mass, batter and fry.

Use cod loins for a more creamy pure.

VEAL TENDERLOIN AND BRIE CHEESE SANDWICH

FOR 2 PERSONS

Preparation: 15min

INGREDIENTS

  • 2 brie cheese slices
  • Butter
  • Olive oil
  • Old style mustard
  • Salt
  • Pepper

PREPARATION

Butter bread slices with butter on both sides. Heat them low flame in griddle. Season veal tenderloin with salt and pepper and grill them to one’s taste. Make the sandwich with the veal and the brie slices. Heat sandwiches again in griddle until the bread is toasted and the cheese is melt.
THE CHEF’S ADVICE
Old style mustard can be served as accompaniment or added on the veal during sandwich making.
