POTATO WRAPPED NORWAY LOBSTERS WITH PINIONS

FOR 2 PERSONS

INGREDIENTS

  • 4 Norway Lobsters
  • 1 Small Potato
  • Toasted Pinions
  • Olive Oil

PREPARATION

Use a mandolin to slice the potato into very thin layers. Peel the Norway lobsters and wrap with the potatoes. Brown them carefully in a frying pan with some olive oil. Sprinkle the pinions and serve.
THE CHEF’S ADVICE
Make a transversal cut to the Norway lobsters to avoid them from bending.

BATTERED CUTTLEFISH WITH “ROMESCO” DUST

FOR 4 PERSONS

Preparation: 60min

INGREDIENTS

  • 150gr Cuttlefish
  • 1/2L Olive Oil
Romesco Dust
  • 2 Garlic Bulbs
  • 4 Ripe Tomatoes
  • 100gr Toasted Hazelnuts
  • Jerez Vinegar
  • 3 Sweet Peppers

PREPARATION

For the “romesco” dust…

 

Bake tomatoes and garlic bulbs, peel and place in the food processor. Add the other ingredients and blend. Spread the dust in a tray creating a thin layer and dry in the oven. Blend it again to create the dust.

 

For the cuttlefish…

 

Butter in flour, fry in very hot oil and strain. Serve and sprinkle with the “romesco” dust.

THE CHEF’S ADVICE
Cuttlefish must be buttered in flour one by one.

LOBSTER STEW

FOR 2 PERSONS
Difficulty: Medium
Preparation: 45min

INGREDIENTS

  • 1 Lobster
  • 2 Prawns
  • 2 White Fish Cuts
  • 2 Onions
  • 4 Garlic Cloves
  • 1/2L White Wine
  • 500gr Tomato Sauce
  • 300gr Single Cream
  • Olive Oil
  • Grated Parmesan

PREPARATION

the onions in julienne and brown in a casserole together with the garlic cloves and some olive oil. Add the white wine. When poached, add the tomato sauce. Boil during 5 minutes. Add the single cream. Grind, strain and set apart.

 

Cut the lobster in two halves, cover with the sauce, add the parmesan cheese and bake for 30 minutes at 180 °C. Seal the fish and the prawns in a griddle and add them in the casserole at the end of the cooking process so as they are cooked to perfection.

You can reuse the sauce to cook a great dish. Fry some eggs and mix them with the sauce.
