APPLE TATIN

FOR 4 PERSONS

INGREDIENTS

  • 500gr Reinette Apple
  • 250gr Sugar
  • 200gr Butter
  • 1 Puff Pastry Dish

PREPARATION

Heat the butter at low temperature in a frying pan with removable handle and add the sugar. Make a golden caramel. Peel the apples and brown them in the caramel. Place the puff pastry dish on the top and cover the apples. Put the frying pan in the oven and remove the handle. Bake for 20minutes at 180°C. Use the handle to remove the frying pan from the oven. Serve.

THE CHEF’S ADVICE
Tatin must stand one hour before serving.

GRILLED STRAWBERRIES WITH VANILLA GELATO

FOR 4 PERSONS

Preparation: 20min

INGREDIENTS

  • 8 strawberries
  • Brown sugar
  • Balsamic vinegar
  • Vanilla gelato
  • Peppermint

PREPARATION

Cut strawberries in large cubes, sprinkle them with brown sugar and add some drops of balsamic vinegar. Grill them in griddle on both sides and serve them with the vanilla gelato. Decorate them with a peppermint leaf.

THE CHEF’S ADVICE
To caramelize strawberries, griddle must be very hot.

GRILLED FRUIT SALAD WITH STRAWBERRY JUICE

FOR 4 PERSONS

Preparation: 75min

INGREDIENTS

  • 1 Pear
  • 1 Apple
  • 1 Peach
  • 1 Mango
  • Strawberry Juice
  • 500gr Strawberries
  • 100gr Sugar

PREPARATION

Put the strawberries and sugar in a vacuum bag, heat in a bain-marie during one hour, strain and set apart.

 

Grill the fruits, serve in a deep dish and pour the strawberry juice.

Bain-marie must not boil.
